You just need to have a multi track recording of the
show to put it in a surround sound mix. You will
find most bands that are recording a show for
possible future release will record in a multi track
re-mixable format. I can think of bands that have
released live CD's that are the stereo mix straight off
the desk on the night (though these are mostly bonus
disk type things that nobody wanted to spend real
money on anyway so they just went with the DAT).
The problem you get using the stereo mix on the night
is that you will get mainly vocals, reverb and acoustic
instruments really loud (as all of their volume is
provided by the PA) and things like drums, bass and
electric guitars have a large amount of stage volume
(because they are loud or they have big amps and
things, so these items do not go through the PA so
much and do not end up on the desk tape).
     So as long as it is financially viable to do a 5.1 mix
every DVD should be able to be done in this format.
Even if you do end up with a stereo mix only, you will
find that this would be a remix that was done after
the original performance (the only problem that could
arise is that nobody thought they would need the
multi track tapes again and they could be lost, thrown
out or just not properly stored and may have worn
out).
