Just adding my thoughts...
In addition to the Oils, I'm a big fan of: Afro Celt Sound System, Eels,
Lyle Lovett, James, Radiohead, R.E.M., Bjork, Yes, Rush, Neil Young, David
Byrne/Talking Heads, Emmylou Harris, Paula Cole, and Bob Dylan (especially
love his new Love & Theft). I also love the work of a film composer named
Carter Burwell.
Echoing Kelly's comments: I find most popular music atrocious, but there is
some great stuff around that needs to be discovered (and heard). Most of my
choices aren't exactly "underground" bands, though I do like many
lesser-known artists (Dar Williams, Lucinda Williams, Sinead Lohan). I
think the most important thing in listening to music is keeping an open
mind. And I think lists like these are often the best way to become exposed
to unfamiliar artists.

Oils top them all for me. But I also like James, U2, Garbage,
Radiohead, Crowded House, Split Enz, Alice in Chains, Andy White,
Hothouse Flowers, Loreena McKennitt, Smashing Pumpkins. Most popular
music I find unbearable but there is some good stuff out there.
